Mendoza Vineyards Cabernet Sauvignon Reserve

This wine is meant to be a well representor of an organic terroir. It is a balanced wine in which oak and ripe fruit aromas are intermingled in the nose. It's short  stage in barrels contribute to it's structure and long finish.

 

Tasting Notes

  • Appearance: Intense ruby red with violet reflections.
  • Nose: Fresh cassis, raisins, and blackberries dominate, followed by subtle herbal notes. Oak contributes hints of caramel and vanilla.
  • Palate: Well-structured and balanced, with soft tannins and a touch of sweetness. Medium length, fine, and elegant.

Food Pairing

Pairs excellently with grilled red meats, roasted lamb, dishes with Mediterranean herbs, and semi-aged cheeses.

Soil: Old vineyards planted on soils with superficial irrigation.
Yields around 100 qq/ha.
Climate: Warm days and cool nights, with a thermal amplitude of 14°C and average annual rainfall of 200 mm.

Vintage

Low yields due to moderate frosts in the Uco Valley. Early harvests achieved perfect balance. Following the 2016 harvest, which was the coldest and scarcest in three decades due to El Niño, 2017 also experienced low yields from spring frosts caused by a drier and slightly cooler climate.

Winemaking

Harvested manually in 20 kg plastic boxes from late March to early April. Long fermentation and extended maceration enhance roundness and structure. Alcoholic fermentation takes place with native yeasts at 22°C. During skin contact, gentle pump-overs prevent the extraction of overly strong herbal aromas and harsh tannins.

Oak Stage

30% of the blend is aged for 12 months in French and American oak barrels, contributing subtle oak nuances.
