This wine is meant to be a well representor of an organic terroir. It is a balanced wine in which oak and ripe fruit aromas are intermingled in the nose. It's short stage in barrels contribute to it's structure and long finish.

Ideal with grilled meats, roasted lamb, dishes with Mediterranean herbs, and semi-aged cheeses.

Soil: Alluvial origin. Deep, stony, sandy loam, low in organic matter. Vines are irrigated superficially.
Climate: Warm days and cool nights, with a thermal amplitude of 19°C, ideal for slow and balanced grape ripening.
Winemaking
Harvest takes place in March. Grapes are gently crushed to avoid premature tannin extraction. Traditional fermentation occurs at 24°C using selected yeasts, with daily pump-overs and delestages to extract color, tannins, and aromatic compounds. A 4-day post-fermentative maceration follows. The free-run juice is then racked into stainless steel tanks and blended with a portion of press wine obtained from the skins. Malolactic fermentation occurs naturally, enhancing roundness and complexity.
Oak Stage
30% of the blend is aged for 12 months in French and American oak barrels, contributing subtle oak notes and structure.
